About the Facility
Wedding Oak Winery is a 10,000 case production facility in downtown San Saba designed for boutique and mid-sized Texas brands that need additional bandwidth at harvest or a turnkey grape-to-bottle service. The plant is fully bonded, TABC-licensed, HACCP-documented, and protected by 24-hour video monitoring.
Proven record: Multiple gold/platinum medals at TEXSOM, Lone Star, San Francisco International, San Francisco Chronicle, San Antonio Rodeo, Houston Rodeo Uncorked!, and Experience Rosé wine competitions (2012 – 2024 vintages)
Capacity & Scheduling
Minimum lot: two pallets per SKU (≈ 112 cases / ~264 gal)
Maximum throughput: up to 2,000 gal per client, per harvest wave
Booking window: 1 July 2025 – 30 June 2026
Deposit: Negotiable; Financing available.

Grape Reception
• Gentle pneumatic grape and wine pressing
• Variable-speed must pumping and whole-cluster option
• SO₂, enzyme, tannin, and nutrient programmes tailored to Texas fruit chemistry
Fermentation Management
• Jacketed stainless tanks (275–2,200 gal) and half ton macro-bins
• Glycol Temperature control from 40 °F to 90 °F (±0.5 °C)
• Pump-overs, Barrel fermentation, and Open-top punch-down options.
• YAN-driven nutrient scheduling, redox, and dissolved-oxygen monitoring.
• Co-fermentations, Co-innoculations, and Malo-lactic fermentations.
Aging & Elevage
• 300+ barrels (75 % French, 23 % American, 2 % Hungarian) in 12- and 24-month programs
• Dedicated 60 °F / 70 % RH cellar
• Micro-oxygenation, batonnage, and alternative oak formats
Laboratory & Finishing
• Chem panel: pH, TA, VA, Glu/Fru, free SO₂, total SO₂
• Bench trials for fining, and mouthfeel optimisation
• Plate-and-frame filtering, and cold stabilisation capabilities
Varietal Focus
Protocols are specifically tuned for Hill Country and High Plains fruit—high-pH, low-TA red and white varieties such as Tempranillo, Tannat, Dolcetto, Mourvèdre, Touriga Nacional, Sangiovese, Montepulciano, Marsanne, Roussanne, Trebbiano, Chenin Blanc, and Riesling.
