Subject :Utilization of Winery Pomace waste for the production of Valuable natural products

Approximately 25% of the grape weight results in a byproduct
waste material termed ‘pomace’ which is comprised of other vegetable structures such as skins stems, lees and seeds. At the same time, all of these individual particles are composed by rich natural products substances having health-promoting functions. As a paradox, instead of using it for making valuable food materials, this rich polyphenol natural material is currently composted by being reintroduced or buried in landfills into the vineyards.

Due to the increasing consumer demand for the use of natural derived food products and nutraceuticals over synthetic pharmaceutical compounds, I developed a technology for the bio-version of this winery waste into functional foods, cosmetics (grapeseed oil + antioxidants), pharmaceuticals, and nutraceutical products.
